    2 Hy-Vee eggs
    2 lbs. lean ground beef
    1 (1 oz) envelope Hy-Vee onion soup mix
    1 c. Hy-Vee shredded mozzarella cheese
    1 tbsp. Hy-Vee ketchup
    Hy-Vee barbecue sauce or Hy-Vee ketchup, optional

    Directions

    1. Preheat oven to 350 degrees. Spray a broiler pan with non-stick cooking spray.
    2. Beat eggs in a large bowl. Add ground beef, onion soup mix, mozzarella cheese and ketchup. Combine well.
    3. Shape into tablespoon-sized meatballs. Place on prepared broiler pan.
    4. Bake 15 to 18 minutes or until internal temperature reaches 160 degrees. Serve with barbecue sauce or ketchup for dipping, if desired.
