2 (10- to 12-oz.) sweet potatoes
¼ c. Hy-Vee unsalted butter, melted, plus additional for serving
2 tbsp. packed Hy-Vee brown sugar
1 tsp. coarsely ground Hy-Vee sea salt
Coarsely ground Hy-Vee black pepper, to taste

Directions

  1. Preheat oven to 375 degrees. Line a rimmed baking pan with foil; set aside.

  2. Wash and dry sweet potatoes; pierce several times with a fork. Place in prepared pan. Bake for 50 to 60 minutes or until fork-tender. Cool for 10 minutes.

  3. Remove and discard skins from sweet potatoes; place sweet potato pulp in a large bowl. Mash with a potato masher or an electric mixer on low. Stir in 1/4 cup butter, brown sugar and sea salt. 

  4. Serve with additional butter, if desired. Season to taste with black pepper.
