4 petite baby carrots, for decorating
20 Hy-Vee whole black peppercorns, for decorating
1 small green bell pepper slice, for decorating
8 small sprigs fresh thyme, for decorating
Fresh rosemary sprigs, for garnish

Directions

  1. Pour 1½ cups water into a microwave-safe bowl. Microwave on HIGH for 2 to 3 minutes, or until boiling. Stir in instant mashed potatoes until combined.

  2. Using three different size scoops (such as a 2-in., 1 ½-in. and 1 ¼ in.), scoop 4 potato balls of each size. Stack the different size potato balls to create 4 snowmen on a large serving platter.

     

  3. Peel off the tips from each carrot using vegetable peeler or small paring knife; cut for the noses. Use black peppercorns for eyes and buttons. For the scarf, cut the green portion of the green onion into 4 thin ribbons. For the mouth, cut thin strips of bell pepper. For the arms, use small sprigs of fresh thyme.

  4. Garnish platter with rosemary, if desired.
