½ c. Hy-Vee Select olive oil | ||
1 large shallot, chopped | ||
4 clove(s) garlic, minced | ||
2 lbs. baby bella mushrooms | ||
½ c. chopped fresh parsley | ||
1 ½ c. Hy-Vee chicken broth | ||
¼ c. Hy-Vee lemon juice | ||
3 tbsp. Hy-Vee Select red wine vinegar | ||
1 tsp. Hy-Vee red pepper flakes | ||
2 Hy-Vee bay leaves |
Directions
- Heat oil in a large skillet over medium-low heat.
- Add shallot and garlic. Sauté until golden, about 6 minutes.
- Discard shallot and garlic. Increase heat to medium-high. Add mushrooms and parsley. Sauté for 8 minutes.
- Reduce heat to medium-low. Stir in chicken broth, lemon juice, vinegar, red pepper flakes and bay leaves. Cover and simmer 5 minutes.
- Cool to room temperature. Transfer to container, cover and chill until cold.
- To serve, drain mushrooms and discard bay leaves.
