Servings and Ingredients
|1 lbs. sweet potatoes, or yams, about 4 medium|
|1 tbsp. Hy-Vee Select 100% pure maple syrup|
|1 tbsp. Hy-Vee coconut oil|
|¼ tsp. Hy-Vee nutmeg, or Hy-Vee cinnamon|
|¼ tsp. Hy-Vee salt|
|Hy-Vee pecans, optional|

- Preheat oven to 400 degrees.
Prick sweet potatoes all over with a fork; bake sweet potatoes for 30 to 40 minutes or until soft to the touch. For quicker preparation, microwave until tender. Cool 5 to 10 minutes.
Remove and discard skins; place potato pulp in a large mixing bowl. Mash until desired consistency is reached.
Fold in maple syrup, coconut oil, nutmeg, salt and, if desired, pecans.
