1red pepper, seeded and chopped
½cucumber, peeled and chopped
½ c.corn
1 c.chopped tomato
¼ c.chopped green onions
1 tbsp.Gourmet Garden cilantro
1 tbsp.Gourmet Garden mild or hot chili
1 tbsp.olive oil
2 tbsp.lime juice
1 tbsp.vinegar
¼ tsp.black pepper
Chips, for serving

Directions

  1. In a medium bowl combine all ingredients. Refrigerate up to 24 hours.
  2. Let stand at room temperature for 30 minutes before serving with chips.
