Mango-Curry Chicken Salad
Servings and Ingredients
|2 ½ c.||(1/2-inch pieces) grilled skinless boneless chicken breasts|
|¾ c.||nonfat plain yogurt|
|¼ c.||cubed mango|
|1 c.||sweetened dried cranberries|
|¼ c.||walnuts, coarsely chopped|
|⅓ c.||cubed mozzarella|
|Lettuce leaves, for serving|
- Grill chicken breasts, cut into small pieces and set aside.
- In a medium bowl, blend yogurt and curry with a whisk.
- Stir in chicken, mango, cranberries, walnuts and mozzarella. Mix well.
- Divide into 4 servings and serve on lettuce leaves, if desired.
