    ¾ c. Hy-Vee elbow macaroni
    1 (15 oz) can no-salt-added tomato sauce
    ½ tsp. Hy-Vee garlic powder
    1 tsp. Italian seasoning
    1 tsp. dried parsley flakes
    ½ tsp. Hy-Vee black pepper
    1 c. fat-free cottage cheese
    1 c. shredded reduced-fat mozzarella cheese, divided
    ¼ c. Hy-Vee shredded Parmesan cheese

    Directions

    1. Prepare macaroni according to package directions. Drain; set aside.
    2. Combine tomato sauce, garlic powder, Italian seasoning, parsley flakes and black pepper in a large skillet. Bring to a boil.
    3. Stir together cottage cheese, 1/2 cup mozzarella cheese and Parmesan cheese. Stir into tomato sauce. Simmer 5 minutes or until the cheeses begin to melt, stirring often.
    4. Stir in macaroni. Evenly sprinkle remaining 1/2 cup mozzarella cheese over top. Cover and simmer until mozzarella cheese melts, about 3 minutes.
