    ¼ c. mascarpone cheese, softened
    2 green onions, thinly sliced
    ¼ c. diced fresh tomatoes
    4 slice(s) Hy-Vee white bread
    4 slice(s) Hy-Vee provolone cheese
    ½ c. arugula
    1 c. coarsely chopped cooked lobster meat
    4 tbsp. Hy-Vee unsalted butter, softened, divided

      Directions

      1. In medium bowl, stir together mascarpone cheese, green onions and tomatoes. Spread over each bread slice. Top with cheese slices. Top 2 slices with 1/4 cup arugula and 1/2 cup lobster meat each. Place remaining bread slices on top to form a sandwich.

      2. In a large skillet, melt 2 tablespoons butter over medium heat. Place sandwiches in skillet and spread remaining butter over sandwich tops. Cook sandwiches until bread is golden brown, about 3 minutes. Using a spatula, carefully flip sandwiches, pressing down gently. Continue cooking an additional 3 minutes, or until both sides are golden brown and filling is warm and cheese is melted.
