    6 medium Hy-Vee russet potatoes
    8 oz. lean ground beef, browned and drained
    1 (10.5 oz) can Hy-Vee Healthy Recipe cream of mushroom condensed soup
    1 ½ c. Hy-Vee frozen mixed vegetables, thawed
    ⅓ c. crushed baked potato chips or french-fried onions

    Directions

    1. Preheat oven to 350 degrees. Wash potatoes and poke each 8 to 10 times with a fork. Place in a greased baking dish. Cover with aluminum foil and bake 60 to 90 minutes or until soft.
    2. Combine ground beef, soup and vegetables in a small bowl.
    3. When potatoes are cool enough to handle, split open and fill each with vegetable mixture. Return to oven and bake 10 minutes or until heated through. Sprinkle with crushed potato chips and bake an additional 3 to 5 minutes.
