    1 lemon
    1 (3-1/2 to 4 lb) Smart Chicken organic whole chicken, neck removed
    2 tbsp. Spectrum olive oil
    Hain sea salt and black pepper, to taste
    6 sprigs fresh thyme, divided

    Directions

    1. Preheat oven to 375 degrees. Place lemon in a small saucepan and fill with water. Bring to a boil. Simmer 3 minutes.
    2. Meanwhile, place chicken in the center of two 24-inch-long sheets of foil. Season chicken skin with olive oil, salt and pepper.
    3. When lemon is soft, carefully poke several holes in lemon skin. Place lemon in the large cavity of the chicken. Add 3 sprigs of thyme. Place remaining sprigs on top of chicken. Wrap up with foil. Place on a baking sheet.
    4. Bake for 60 minutes. Pull the foil away so the chicken is exposed but juices cannot run out. Bake for an additional 20 minutes until chicken is golden and juices run clear.
