    1 medium lemon
    1 tbsp. Hy-Vee butter, softened
    1 tbsp. Hy-Vee lemon pepper seasoning
    1 fryer chicken

    Directions

    1. Place lemon in boiling water and simmer for 5 minutes.
    2. Meanwhile, stir together butter and seasoning. Evenly coat chicken with butter mixture.
    3. Remove lemon from the boiling water and poke 3 to 5 slits in the skin. Place lemon in the open cavity of the chicken.
    4. Wrap chicken in foil to cover completely.
    5. Cook over medium-hot coals for 1 hour or until internal temperature reaches 180 degrees. Turn every 15 minutes to prevent burning.
