Directions
- Place lemon in boiling water and simmer for 5 minutes.
- Meanwhile, stir together butter and seasoning. Evenly coat chicken with butter mixture.
- Remove lemon from the boiling water and poke 3 to 5 slits in the skin. Place lemon in the open cavity of the chicken.
- Wrap chicken in foil to cover completely.
- Cook over medium-hot coals for 1 hour or until internal temperature reaches 180 degrees. Turn every 15 minutes to prevent burning.
