    1 small egg
    2 tbsp. plus 2 tsp sugar
    1 tbsp. all-purpose flour*
    1 tbsp. lemon juice
    ⅛ tsp. grated lemon rind or dried lemon peel
    3 tbsp. milk

    Directions

    1. Pour water into a 1-1/2-pint microwave-safe dish. Water should not flow over top of custard cup when the cup is placed in the water.
    2. Cook water (without custard cup) in a microwave oven at 100% power for 1 minute (700-watt oven) or for 42 seconds (1000-watt oven).
    3. In a bowl, mix egg, sugar, flour*, lemon juice, lemon rind (or peel) and milk. Pour into a custard cup.
    4. Carefully place the custard cup in the heated water.
    5. Cook at 100% power for 55 seconds (700-watt oven or for 38 seconds (1000-watt oven). Give container a half-way turn.
    6. Cook at 100% power for 50 seconds (700-watt oven) or for 35 seconds (1000-watt oven).
    7. Serve warm or chilled.
    8. If chilled pudding is "weepy" when eaten, increase the cooking time a little the next time the recipe is made, so that pudding will stay firm when chilled.
    9. *For a more cake-like pudding, increase flour to 3 tablespoons. Cooking time remains the same.
