    12 oz. halibut, cut into 1-inch cubes
    12 cube(s) Hy-Vee Bakery sourdough bread
    16 grape tomatoes
    2 tbsp. Gustare Vita olive oil
    1 tbsp. fresh lemon zest
    1 tbsp. fresh rosemary, chopped
    Hy-Vee salt
    Hy-Vee ground black pepper

    • Charcoal or gas grill
    • Metal or wooden skewers
    • Small bowl
    • Silicone pastry brush
    • Meat thermometer

    Directions

    1. Preheat a charcoal or gas grill with a greased grill rack for direct cooking over medium heat according to manufacturer's directions.

    2. Alternately thread halibut, bread cubes and cherry tomatoes onto 4 metal skewers.

    3. Combine olive oil, lemon zest, and rosemary in a small bowl. Brush mixture over kabobs and season with salt and pepper. Grill 4 to 6 minutes or until fish easily flakes with a fork (145 degrees), and bread is charred. Serve immediately.
