    1 tsp. lemon zest
    ¼ c. fresh lemon juice
    2 tbsp. fresh dill, chopped, plus additional for garnish
    ½ tsp. Hy-Vee salt
    ½ tsp. Hy-Vee ground black pepper
    4 (4-oz. each) skin-on salmon fillets
    Lemon wedges, for serving

    Directions

    1. Whisk together oil, lemon zest and juice, dill, salt, and pepper; pour into a shallow dish. Add salmon, skin side up. Let stand while preheating grill.

    2. Preheat a charcoal or gas grill with greased grill rack for direct grilling over medium-high heat.

    3. Remove salmon from marinade; discard marinade. Grill, skin side down, for 10 to 15 minutes or until fish flakes with a fork (145 degrees). Garnish with additional dill and serve with lemon wedges.
