    ¼ c. Hy-Vee margarine, softened
    ½ c. Hy-Vee granulated sugar
    1 tsp. baking powder
    2 Hy-Vee eggs
    ½ tsp. lemon extract
    2 c. Hy-Vee flour
    1 (2 oz) pkg Hy-Vee slivered almonds
    1 tbsp. lemon zest

    Directions

    1. Preheat oven to 375 degrees.
    2. In a large mixing bowl, beat margarine with an electric mixer for 30 seconds until creamy. Add sugar and baking powder. Beat in eggs and lemon extract. Stir in flour, almonds and lemon zest with a wooden spoon.
    3. Shape dough into two 12-inch-long logs. Place on a greased baking sheet.
    4. Bake 15 minutes or until a wooden toothpick inserted in center comes out clean.
    5. Cool on wire rack. Turn oven down to 300 degrees.
    6. Cut each log into 1/2-inch slices.
    7. Place slices on a greased baking sheet. Bake for 10 minutes; turn cookies over and bake 10 minutes more until dry.
    8. Cool on wire racks.
