    2 c. pre-cooked rice
    1 ½ tsp. cinnamon
    1 tbsp. vanilla extract
    1 c. raisins
    ½ c. slivered almonds, optional
    3 to 4 c. soy milk

    Directions

    1. Mix cooked rice, cinnamon, vanilla, raisins, almonds and soy milk together in a saucepan. Simmer until the mixture begins to thicken, 15 to 20 minutes, stirring occasionally. Remove pan from heat.
    2. Serve hot or refrigerate to serve cold.
