Jeremy's Peanut Butter Pie

⅓ c. peanut butter | ||
¾ c. powdered sugar | ||
1 baked 9-inch pie shell | ||
1 (14 oz) can sweetened condensed milk | ||
4 eggs, separated | ||
1 (3.4 oz) pkg vanilla pudding mix (not instant) | ||
½ c. water | ||
1 c. sour cream, at room temperature | ||
¼ tsp. cream of tartar | ||
6 tbsp. sugar |
Directions
- Preheat oven to 350 degrees.
- In small bowl, cut peanut butter into powdered sugar until crumbly. Sprinkle into pie shell.
- In large saucepan, combine condensed milk, egg yolks, water and pudding mix. Cook until thick, stirring frequently. Cool slightly.
- Stir in sour cream. Spoon into pie shell.
- Beat egg whites with cream of tartar on low speed. With mixer running, beat in sugar 1 tablespoon at a time. Beat on high speed to form soft peaks. Spread onto pie, sealing carefully to pie edge.
- Bake for 15 minutes or until golden brown. Cool completely and refrigerate.
