    1 tsp.Hy-Vee Select olive oil
    1medium onion, diced
    3carrots, peeled, halved lengthwise and sliced
    3stalks celery, sliced
    1 tsp.Hy-Vee Italian seasoning
    2 c.Hy-Vee 33% reduced-sodium chicken broth
    2 c.water
    3 c.frozen Hy-Vee Select cheese tortellini
    3 c.baby spinach
    Hy-Vee salt and Hy-Vee black pepper, to taste
    Hy-Vee grated Parmesan cheese, optional

    Directions

    1. Heat oil in large pot over medium heat. Add onion, carrot, celery and Italian seasoning; sauté, stirring occasionally, 5 to 7 minutes or until vegetables soften.
    2. Stir in broth and water. Cover and bring to a boil over medium-high heat.
    3. Stir in tortellini, reduce heat and simmer 3 minutes. Add spinach and cook, stirring until wilted, about 2 minutes.
    4. Season with salt and pepper. If desired, sprinkle with cheese before serving.
