Italian Tortellini Soup
Servings and Ingredients
|1 tsp.||Hy-Vee Select olive oil|
|1||medium onion, diced|
|3||carrots, peeled, halved lengthwise and sliced|
|3||stalks celery, sliced|
|1 tsp.||Hy-Vee Italian seasoning|
|2 c.||Hy-Vee 33% reduced-sodium chicken broth|
|3 c.||frozen Hy-Vee Select cheese tortellini|
|3 c.||baby spinach|
|Hy-Vee salt and Hy-Vee black pepper, to taste|
|Hy-Vee grated Parmesan cheese, optional|
- Heat oil in large pot over medium heat. Add onion, carrot, celery and Italian seasoning; sauté, stirring occasionally, 5 to 7 minutes or until vegetables soften.
- Stir in broth and water. Cover and bring to a boil over medium-high heat.
- Stir in tortellini, reduce heat and simmer 3 minutes. Add spinach and cook, stirring until wilted, about 2 minutes.
- Season with salt and pepper. If desired, sprinkle with cheese before serving.
