Directions
Place eggs in small bowl. Combine bread crumbs and salt in medium bowl. Remove goat cheese balls from freezer. Dip balls, one at a time, into eggs; shake off excess. Evenly coat with bread crumb mixture. Repeat process of dipping balls into eggs and coating with bread crumb mixture' return to tray. Freeze for 30 minutes.
Heat oil to 350 degrees in a deep-fat fryer or large heavy saucepan suitable for deep-fat frying. Follow instructions for quantity of oil in deep-fat fryer. For heavy saucepan, use at least 2 inches of oil. Line a baking sheet with paper towels; set aside.
Fry coated goat cheese balls in batches for 3 to 5 minutes or until golden brown and crispy. Drain on paper towels. Sprinkle with fresh chives, if desired. Serve warm.
