    2 ½ c. Hy-Vee skim milk, divided
    ¼ tsp. Hy-Vee salt
    ¼ tsp. Hy-Vee cinnamon
    ¼ tsp. Hy-Vee nutmeg
    ½ c. Hy-Vee granulated sugar
    ¼ c. Hy-Vee raisins
    2 Hy-Vee large eggs, slightly beaten
    ½ tsp. Hy-Vee vanilla extract

    Directions

    1. In a saucepan, combine rice, 2 cups milk, salt, cinnamon, nutmeg, sugar and raisins. Bring to a rolling boil, stirring constantly.  Reduce heat; simmer 10 minutes, stirring occasionally. 

    2. Whisk eggs with remaining 1/2 cup milk. Slowly add to hot mixture, stirring vigorously with a fork. Cook over medium heat until thickened. Stir in vanilla. Cool 10 minutes before serving.
