3 c. Hy-Vee Whole Grain 100 cereal, crushed to one cup | ||
1 ½ c. Hy-Vee all-purpose flour | ||
¼ c. packed Hy-Vee brown sugar | ||
2 ½ tsp. Hy-Vee baking powder | ||
½ tsp. Hy-Vee baking soda | ||
1 ½ c. mashed bananas (about 3 medium) | ||
2 egg whites or 1 whole egg | ||
¼ c. Hy-Vee vegetable oil | ||
¼ c. Hy-Vee honey | ||
2 tbsp. Hy-Vee orange juice |
Directions
- Preheat oven to 350 degrees. Coat 9-by-5-by-3-inch loaf pan with non-stick cooking spray.
- Combine cereal, flour, brown sugar, baking powder and baking soda in a large bowl.
- Combine bananas, egg, oil, honey and orange juice in separate bowl. Add to cereal mixture, stirring just until moistened. Pour into prepared pan.
- Bake 45 to 50 minutes or until tester inserted near center comes out clean. Let stand 10 minutes before removing from pan. Cool on wire rack.
