    3Hy-Vee large eggs
    1 ½ tsp.cornstarch
    1 c.Hy-Vee evaporated fat-free milk
    1 tsp.Hy-Vee vegetable oil
    1 c.chopped onion
    1Hy-Vee frozen deep-dish pie crust
    1 c.Hy-Vee shredded mozzarella cheese
    1 c.sliced plum tomatoes
    ¼ c.shredded basil

    Directions

    1. Combine eggs, cornstarch and evaporated fat-free milk in blender and process until smooth; set aside.
    2. Spray nonstick skillet with cooking spray; add oil and heat on medium heat until hot. Add onion and saute 8 minutes or until lightly browned.
    3. Place onion on bottom of pie crust; sprinkle with cheese. Arrange tomato slices over cheese; sprinkle with basil.
    4. Pour egg mixture over tomatoes. Bake at 350° for 45 minutes or until a knife inserted 1 inch from center comes out clean; let stand 10 minutes.
