3 Hy-Vee large eggs | ||
1 ½ tsp. cornstarch | ||
1 c. Hy-Vee evaporated fat-free milk | ||
1 tsp. Hy-Vee vegetable oil | ||
1 c. chopped onion | ||
1 Hy-Vee frozen deep-dish pie crust | ||
1 c. Hy-Vee shredded mozzarella cheese | ||
1 c. sliced plum tomatoes | ||
¼ c. shredded basil |
Directions
- Combine eggs, cornstarch and evaporated fat-free milk in blender and process until smooth; set aside.
- Spray nonstick skillet with cooking spray; add oil and heat on medium heat until hot. Add onion and saute 8 minutes or until lightly browned.
- Place onion on bottom of pie crust; sprinkle with cheese. Arrange tomato slices over cheese; sprinkle with basil.
- Pour egg mixture over tomatoes. Bake at 350° for 45 minutes or until a knife inserted 1 inch from center comes out clean; let stand 10 minutes.
