    2 tbsp. Hy-Vee Select olive oil
    Hy-Vee salt and Hy-Vee pepper, to taste
    10 clove(s) garlic, minced

    Directions

    1. Preheat oven to 500 degrees. Rub roast with oil, salt, pepper and garlic. Bake for 20 minutes.
    2. Reduce oven temperature to 250 degrees and bake until internal temperature reaches 135 degrees. Remove from oven; allow to rest 30 minutes.
