    2 tbsp. Hy-Vee Select olive oil
    2 tsp. dried rosemary
    1 tsp. dried thyme
    ¼ tsp. cayenne pepper
    2 large potatoes, quartered lengthwise
    4 oz. light Havarti, cut into 8 thin strips


    1. Preheat oven to 400 degrees. In a small bowl combine oil, rosemary, thyme and cayenne; set aside. Place potato quarters in a large bowl and season with salt and pepper to taste. Drizzle with oil mixture; toss to coat.
    2. Spread potato wedges on a baking pan. Bake 35 to 40 minutes or until tender and lightly crisp. Remove from oven.
    3. Preheat broiler. Arrange potatoes so that they touch each other in a single layer on baking pan. Place 1 strip of Havarti on top of each potato wedge. Broil 2 minutes or until cheese melts. Serve immediately.
