Hatch Chile Queso Dip
Servings and Ingredients
|1 tsp. Hy-Vee canola oil|
|¼ c. diced white onion|
|1 (12 oz) can Hy-Vee evaporated milk|
|6 oz. white American cheese, chopped|
|8 oz. Hatch chile cheese, shredded|
|Chopped tomato and chopped fresh cilantro, optional|
|Hy-Vee tortilla chips, for serving|
- Heat oil in a medium skillet over medium heat. Cook onion, stirring often, for 7 minutes or until it is softened.
- Add evaporated milk to the skillet and bring to a simmer, stirring frequently. Add American cheese and stir until completely melted. Remove from heat, add Hatch chile cheese and stir until completely melted.
- Garnish with tomato and cilantro. Serve with chips, if desired. Dip will thicken upon standing.
