Who doesn't love the classic caprese combination of fresh mozzarella, tomatoes, and basil? Skip the salad and make these Hasselback Tomatoes for an unforgettable grilled appetizer.

1(8-oz.) pkg. fresh mozzarella cheese, cut into 1/4-inch slices
1 c.fresh basil leaves, lightly packed

  • Charcoal or gas grill
  • Aluminum foil

Directions

  1. Prepare a charcoal or gas grill for indirect cooking over medium-high heat. Make a 12-inch square pan out of heavy foil; set aside. 

  2. Cut a thin piece off bottoms of roma tomatoes. Stand tomatoes upright and cut crosswise at 1/4-inch intervals, cutting 1/2-inch from the bottom. Alternate mozzarella slices and fresh basil leaves between the tomato slices.

  3. Place tomatoes in foil pan. Grill 10 minutes or until cheese begins to melt.
