    1 (30 oz) pkg Hy-Vee frozen Country Style shredded hash brown potatoes, thawed
    2 c. Hy-Vee shredded Colby jack cheese, divided
    1 (10.75 oz) can condensed cream of potato soup
    1 (8 oz) container Hy-Vee sour cream
    ½ c. chopped red pepper
    ½ c. Hy-Vee butter, melted
    4 slice(s) Hy-Vee bacon, cooked and chopped
    Sliced green onions, optional

    Directions

    1. Preheat oven to 350 degrees.
    2. In a large bowl, combine hash browns, 1-1/2 cups cheese, cream of potato soup, sour cream, red pepper, butter and bacon. Place mixture in a greased 3-quart casserole dish. Top with remaining 1/2 cup cheese.
    3. Bake for 45 minutes or until mixture is hot and bubbly. Top with green onions before serving.
