Description

Don't throw your ham bones away! Use them to make a delicious ham broth and then pack it with beans, potatoes, and your other favorite soup ingredients.

1 large ham bone, or ham hock
7 c. water
1 tbsp. Gustare Vita olive oil
1 white onion, chopped
5 red potatoes, chopped
4 carrots, peeled and sliced
3 clove(s) garlic, minced
2 (15-oz.) each cans Hy-Vee great Northern beans, rinsed and drained
1 tsp. Hy-Vee dried thyme leaves
2 Hy-Vee dried bay leaves
Fresh thyme, for garnish

Directions

  1. Place ham bone in stockpot; cover with water. Bring to boiling; reduce heat. Simmer 1 hour. Remove bone and liquid from pot. When cool, cut meat off bone; coarsely chop. Discard bone,

  2. Heat olive oil in same pot. Add onion, potatoes, carrots, and garlic. Cook 2 to 3 minutes. Stir in ham stock, beans, thyme, and bay leaves. Bring to boiling; reduce heat. Simmer 10 minutes.

  3. Place 2 cups mixture in a blender. Cover and blend until pureed. Add back to pot. 

  4. Stir in ham; heat through. Garnish with fresh thyme, if desired.
