|1 large ham bone, or ham hock|
|7 c. water|
|1 tbsp. Gustare Vita olive oil|
|1 white onion, chopped|
|5 red potatoes, chopped|
|4 carrots, peeled and sliced|
|3 clove(s) garlic, minced|
|2 (15-oz.) each cans Hy-Vee great Northern beans, rinsed and drained|
|1 tsp. Hy-Vee dried thyme leaves|
|2 Hy-Vee dried bay leaves|
|Fresh thyme, for garnish|

Heat olive oil in same pot. Add onion, potatoes, carrots, and garlic. Cook 2 to 3 minutes. Stir in ham stock, beans, thyme, and bay leaves. Bring to boiling; reduce heat. Simmer 10 minutes.
Place 2 cups mixture in a blender. Cover and blend until pureed. Add back to pot.
Stir in ham; heat through. Garnish with fresh thyme, if desired.
