    1 tbsp. Hy-Vee canola oil
    2 c. Mr. Dells hash browns
    Hy-Vee sea salt and freshly ground Hy-Vee black pepper, to taste
    ½ c. Hy-Vee diced ham
    ½ c. Hy-Vee shredded cheddar cheese
    2 Hy-Vee large eggs

    Directions

    1. Heat canola oil in a large non-stick skillet over medium heat. Add hash browns and season lightly with salt and pepper. Cook, without stirring, until golden brown, about 8 minutes. Flip and cook an additional 2 minutes.
    2. Reduce heat to low. Sprinkle with diced ham and cheese. Cover.
    3. Meanwhile, spray a small non-stick pan with non-stick cooking spray and heat over medium heat. Break an egg into a small bowl and gently slide into 1 side of skillet. Break other egg into a small bowl and slide into other side of skillet. Cook until egg whites are completely set and egg yolks are slightly firm, about 8 minutes. The eggs should reach at least 140 degrees.
    4. Slip a spatula beneath each egg and slide on top of hash browns, ham and cheese. Serve immediately.
