Grilled Mahi Mahi Skewers

Description
Hearty mahi mahi skewers take a turn on the grill for charbroiled flavor. Combine with salsa for tasty tacos.

3 tbsp. cilantro-lime vinaigrette, or preferred vinaigrette | ||
1 avocado, peeled, seeded and chopped | ||
4 (5-to-6-oz. each) mahi mahi fish steaks, thawed if frozen, cut into 1-inch chunks | ||
2 tbsp. Gustare Vita olive oil | ||
1 tbsp. Hy-Vee lemon pepper seasoning | ||
4 metal or wooden skewers | ||
Lime wedges, for serving | ||
Fresh corn tortillas, optional |

Directions
Prepare for direct grilling over medium heat.
For tropical bean salsa, in a large bowl toss together beans, orange, mango and/or pineapple, onion, cilantro and vinaigrette. Stir in avocado; set aside.
In a bowl, toss together fish chunks, olive oil and lemon pepper seasoning. Thread fish onto skewers. Grill skewers for 8 minutes or until fish is firm to the touch, turning once halfway through.

If using bamboo skewers, soak skewers in water for 30 minutes before using.Remove skewers from grill. Serve with salsa, lime wedges and, if desired, tortillas for fish tacos.
