Grilled Bruschetta Toasts

1 loaf Hy-Vee Bakery Italian bread, cut into 1-inch slices | ||
3 tbsp. Hy-Vee Select olive oil, divided | ||
1 c. cherry tomatoes, quartered | ||
1 small yellow bell pepper, seeded and chopped | ||
2 tbsp. chopped fresh basil | ||
1 garlic clove, minced | ||
3 tbsp. grated Parmesan cheese |
Directions
- Preheat grill to medium-low (275°F to 300°F). Brush bread with 2 tablespoons of the oil. Lightly grill both sides of bread about 1 minute per side.
- Meanwhile, in a small bowl combine tomatoes, bell pepper, basil, garlic and remaining 1 tablespoon oil
- Spoon tomato mixture onto toasts, sprinkle with cheese, and serve.
