Grill-Roasted Mediterranean Potatoes
Servings and Ingredients
|4 large russet potatoes, scrubbed and cut into 1-inch-thick slices|
|1 small red pepper, seeded and cut into 1-inch pieces|
|1 small yellow pepper, seeded and cut into 1-inch pieces|
|1 tbsp. Hy-Vee Select olive oil|
|2 tsp. McCormick Mediterranean spiced sea salt|
- Preheat grill. Spray grill with cooking spray for grilling.
- Place vegetables in a large disposable aluminum pan. Toss with olive oil and sea salt. Cover with aluminum foil.
- Grill over medium heat, shaking pan occasionally, until potatoes are tender, about 20 minutes.
