4 large russet potatoes, scrubbed and cut into 1-inch-thick slices
1 small red pepper, seeded and cut into 1-inch pieces
1 small yellow pepper, seeded and cut into 1-inch pieces
1 tbsp. Hy-Vee Select olive oil
2 tsp. McCormick Mediterranean spiced sea salt

Directions

  1. Preheat grill. Spray grill with cooking spray for grilling.
  2. Place vegetables in a large disposable aluminum pan. Toss with olive oil and sea salt. Cover with aluminum foil.
  3. Grill over medium heat, shaking pan occasionally, until potatoes are tender, about 20 minutes.
