|1||(16 oz) jar medium green salsa|
|½ c.||heavy whipping cream|
|1 lbs.||cooked chicken breasts, shredded|
|⅓ c.||chopped roasted red bell peppers|
|12||Hy-Vee fajita-sized flour tortillas|
|1 c.||Hy-Vee shredded cheddar-jack cheese|
- Combine salsa and whipping cream in a large bowl; set aside.
- In another large bowl, combine shredded chicken, red bell peppers and 3/4 cup salsa mixture.
- Fill each tortilla with 1/3 cup chicken mixture. Roll up and arrange, seam-side-down, in a greased 9-by-13-inch baking dish. Top with remaining salsa mixture, then cheese.
- Bake at 350ºF for 40 to 45 minutes, or until cheese is golden. Let rest 10 minutes before serving.
