    4 apples, halved, cored
    2 lemons, halved
    4 tbsp. Hy-Vee butter
    1 c. low-fat granola
    ½ c. chopped Hy-Vee pecans
    ½ c. Hy-Vee dried cranberries
    ½ c. golden raisins
    ⅓ c. light corn syrup
    ⅓ c. packed Hy-Vee brown sugar
    Pinch Hy-Vee salt
    Purchased caramel sauce

    Directions

    1. Preheat oven to 350 degrees. Line a baking sheet with foil.
    2. Place apples cut-side-up on prepared baking sheet. Squeeze lemon juice over the cut side of each apple to prevent browning. Bake for 20 to 40 minutes or until slightly soft but still a bit crisp (exact time will depend on size of the apples).
    3. Meanwhile, in a medium skillet, melt butter. Add granola, pecans, cranberries, raisins, corn syrup, brown sugar and salt. Cook 3 to 4 minutes or until warmed and golden. To serve, stuff each baked apple half with 2 to 3 tablespoons of warm granola filling. Drizzle with warmed caramel sauce just before serving.
    4. *As an alternative, apples can be stuffed with granola filling without being roasted.
