Description

Gorgonzola is an Italian blue cheese with a rich, strong flavor. If you would prefer something a little more mild, cream cheese or brie would be good alternatives.

1 (8 oz) loaf Baking Stone honey whole grain bread, sliced diagonally to 1/2-inch-thick slices
1 tbsp. plus extra Hy-Vee Select olive oil to spread on bread
½ c. soft gorgonzola cheese
⅓ c. mascarpone
3 c. baby arugula
1 ½ tsp. red wine vinegar
1 pear, cored and thinly sliced
3 tbsp. golden raisins
½ c. toasted Hy-Vee walnuts
Hy-Vee honey, for drizzling

Directions

  1. Brush bread slices with olive oil. Cook on a preheated ridged pan on the stove top until toasted or in the oven at 350 degrees on a sheet pan for 5 to 10 minutes, until crisp.
  2. In a small bowl, mash gorgonzola and mascarpone together. In a large bowl, toss arugula with 1 tablespoon olive oil and vinegar. Spread gorgonzola mixture on toasted bread. Top with pear slices, arugula mixture, raisins and walnuts. Drizzle with honey.
