Goblin Filled Mini-Cupcakes
Servings and Ingredients
|1||(18.25 oz) pkg Hy-Vee extra-moist spice cake|
|½ c.||silken tofu|
|Gooey Filling: The Miller's Apple Butter|
|Goblin Frosting: Sans Sucre cheesecake mousse mix, prepared according to package directions|
- Combine cake mix, tofu, water and eggs in a mixing bowl; blend until moist. Fill mini cupcake holders 2/3 full and bake at 350 degrees for 20-25 minutes or until a toothpick inserted in comes out clean.
- For the filling, place apple butter in a pastry bag with tip inserted. Insert pastry bag into top of cooled cupcake and pipe in filling.
- Frost with prepared mousse mix. Refrigerate cupcakes until serving time and refrigerate any leftovers.
