    1 c. fresh parsley
    ¼ c. green onions
    1 tbsp. fresh thyme
    ½ c. olive oil, plus additional for chicken
    3 tbsp. Hy-Vee grated Parmesan cheese
    1 tbsp. Hy-Vee Italian seasoning
    1 tsp. Hy-Vee salt, plus additional for seasoning

    • Rimmed baking pan
    • Aluminum foil
    • Wire rack
    • Hy-Vee nonstick cooking spray
    • Paper towels
    • Food processor or blender
    • Silicone pastry brush

    Directions

    1. Preheat oven to 425 degrees. Line a rimmed baking pan with aluminum foil; place a wire rack on top of foil and spray with nonstick spray. Pat chicken dry with paper towels.

    2. In a food processor or blender, add garlic, parsley, green onions, thyme, and 1/2 cup olive oil. Pulse to combine. Pour into a bowl and stir in Parmesan cheese, Italian seasoning, and salt; set aside.

    3. Brush chicken with oil and season with salt. Place on prepared rack. Roast for 20 minutes. Roast 15 minutes more or until chicken is done (165 degrees), brushing occasionally with sauce.
