    1 (2-lbs.) Hy-Vee Choice Reserve Kansas City strip roast
    1 tbsp. Gustare Vita olive oil
    1 tbsp. fresh rosemary, chopped
    1 tbsp. fresh oregano, chopped
    3 clove(s) garlic, minced
    2 tsp. Hy-Vee sea salt
    1 tsp. Hy-Vee cracked black pepper

    • Shallow roasting pan with a rack
    • Meat thermometer
    • Aluminum foil

    Directions

    1. Preheat oven to 425 degrees. Pat roast dray with paper towels. Combine olive oil, rosemary, oregano, garlic, salt, and pepper in a small bowl. Rub mixture all over meat. 

    2. Place roast on a rack set in a shallow roasting pan. Roast, uncovered, for 35 minutes for medium rare (130 degrees), or 45 minutes for medium (140 degrees).

    3. Cover roast with foil and let stand 15 minutes before slicing.
