Garlic Cauliflower Mashed Potatoes
Servings and Ingredients
|1 large head cauliflower, cut into florets and stems|
|5 large cloves garlic, chopped|
|2 tbsp. butter|
|¼ tsp. freshly ground nutmeg|
|Freshly ground black pepper, to taste|
|Chives and parsley, for garnish|
- Fill a large pot with 1 to 3 inches of water. Add a steam and cover. Bring to a boil.
- Add cauliflower stems and half the florets to the steamer. Sprinkle with salt. Add the rest of the florets and garlic.
- Cover and steam for 10 to 15 minutes or until cauliflower is soft.
- Drain and transfer cauliflower to a food processor. Add butter, nutmeg and pepper. Process until smooth. Sprinkle with chives and parsley.
