1 ½ c. vegetable broth
1 tbsp. Hy-Vee unsalted butter
½ tsp. salt-free garlic and herb seasoning
⅔ c. Hy-Vee skim milk
1 ½ c. Hy-Vee mashed potatoes
¼ c. Hy-Vee finely shredded Parmesan cheese

Directions

  1. Boil vegetable broth, butter and seasoning in a medium saucepan. Remove from heat; stir in milk. Stir in potatoes. Let stand for 2 minutes; stir well.
  2. Add Parmesan cheese.
  3. If desired, transfer mashed potatoes to a broiler-safe bowl. Broil until top is golden brown, about 3 minutes.
