Fruity Orange Bars
Servings and Ingredients
|1 c. Hy-Vee all-purpose flour|
|1 ¼ c. Hy-Vee Fruit & Frosted O's cereal, finely crushed to 1/2 cup|
|4 tsp. freshly grated orange peel, divided|
|¾ c. Hy-Vee butter, softened, divided|
|⅔ c. Hy-Vee sugar|
|2 Hy-Vee large eggs|
|⅔ c. Hy-Vee shredded coconut|
|¼ c. Hy-Vee orange juice|
|1 c. Hy-Vee Fruit & Frosted O's cereal, coarsely crushed to 3/4 cup|
- Preheat oven to 350 degrees.
- Beat together flour, 1/2 cup finely crushed cereal, 2 teaspoons orange peel and 1/2 cup butter until crumbly. Press into an 8-inch square baking dish. Bake for 20 to 22 minutes or until edges are lightly browned.
- Meanwhile, beat together remaining 1/4 cup butter and sugar. Stir in eggs, one at a time. Beat in coconut, orange juice and remaining 2 teaspoons orange peel. Pour onto hot crust.
- Bake for 30 minutes or until filling is lightly browned and set. Sprinkle with 3/4 cup coarsely crushed cereal. Bake for an additional 5 minutes. Cool completely and cut into bars.
