Fruity Crisp Rice cereal doesn’t just have to be for breakfast. Make this strawberry-featured dessert using only a muffin tin, a bowl and nonstick cooking spray.
Servings and Ingredients
|3 tbsp.||Hy-Vee unsalted butter|
|3 c.||Hy-Vee miniature marshmallows|
|5 c.||Hy-Vee fruity crisp rice cereal|
|1 qt.||fresh strawberries, hulled, sliced, and divided|
|¾ c.||Hy-Vee whipped topping, thawed, divided|

- Hy-Vee nonstick cooking spray
- Large microwave-safe bowl
In a large microwave-safe bowl, melt butter and marshmallows on HIGH for 1 to 1-1/2 minutes, stirring after 1 minute. Quickly stir in cereal.
Divide evenly among 12 greased muffin cups. Press onto bottom and up sides of cups.
Refrigerate until firm, 1 to 2 hours. Remove from muffin cups. Fill each cup with sliced strawberries and top each with 1 tablespoon whipped topping. Garnish with remaining strawberries.
Serve immediately. Store remaining cups, covered, in muffin cups in refrigerator to retain shape.
