Fruit Salad with Pound Cake Croutons
Everyone always says croutons are the best part of a salad—especially if they're made out of pound cake.
Servings and Ingredients
|1/2 of a 12-ounce pound cake, cubed|
|1 c.||green seedless grapes|
|2 c.||fresh pineapple chunks|
|2 c.||halved, hulled fresh strawberries|
|¼ c.||Hy-Vee orange juice concentrate|
|2 tbsp.||Hy-Vee honey|
|1 tbsp.||chopped fresh mint leaves|
- Place pound cake cubes on baking sheet and bake at 350 degrees for 12 minutes, stirring occasionally. Cool.
- Meanwhile, toss blueberries, grapes, pineapple and strawberries together in a large bowl.
- In a small bowl, stir together juice concentrate, honey and mint. Add to fruit; toss gently to coat.
- Top fruit with pound cake croutons.
