2 c.prepared Hy-Vee instant brown rice
2Hy-Vee large eggs, lightly beaten
2 c.Hy-Vee coleslaw mix
1 c.frozen Hy-Vee sweet peas, thawed
2 tbsp.Hy-Vee reduced-sodium soy sauce
2 tsp.garlic chili pepper sauce
¼ c.chopped cilantro leaves

Directions

  1. In a large skillet, heat oil over high heat. Add cooked brown rice; cook until heated through, about 1 minute.
  2. Stir eggs into rice; cook 30 seconds. Add coleslaw mix, peas, soy sauce and chili pepper sauce; cook 2 minutes or until eggs are cooked and peas are heated through. Serve rice topped with cilantro.
