    1 green onion, chopped
    2 Hy-Vee large organic eggs
    2 tbsp. Hy-Vee skim milk
    2 tsp. finely chopped fresh basil or 1/2 tsp dried basil
    Hy-Vee salt and Hy-Vee pepper, to taste
    1 Roma tomato, sliced into wedges
    ¼ c. Hy-Vee shredded mozzarella cheese

    Directions

    1. Sauté green onion in an 8-inch non-stick skillet sprayed with vegetable coating for 2 minutes or until tender.
    2. Whisk together eggs, milk, basil, salt and pepper. Pour over onions in skillet. Cover and cook without stirring 5 minutes.
    3. Top with tomato slices and cheese. Cover and cook five more minutes.
