Fresh Tomato Scramble
Servings and Ingredients
|1 green onion, chopped|
|2 Hy-Vee large organic eggs|
|2 tbsp. Hy-Vee skim milk|
|2 tsp. finely chopped fresh basil or 1/2 tsp dried basil|
|Hy-Vee salt and Hy-Vee pepper, to taste|
|1 Roma tomato, sliced into wedges|
|¼ c. Hy-Vee shredded mozzarella cheese|
- Sauté green onion in an 8-inch non-stick skillet sprayed with vegetable coating for 2 minutes or until tender.
- Whisk together eggs, milk, basil, salt and pepper. Pour over onions in skillet. Cover and cook without stirring 5 minutes.
- Top with tomato slices and cheese. Cover and cook five more minutes.
