2 fresh mangos, peeled and chopped
1 medium red bell pepper, seeded and finely chopped
2 tbsp. chopped green onion
1 tbsp. Hy-Vee Select olive oil
1 tbsp. fresh lime juice
1 tbsp. Hy-Vee Select white wine vinegar
½ tsp. Hy-Vee crushed red pepper
Hy-Vee salt and Hy-Vee black pepper, to taste
Hy-Vee tortilla chips, optional

Directions

  1. In a medium bowl, combine mango, bell pepper, onion, oil, lime juice, vinegar, red pepper, salt and black pepper. Cover salsa and chill until ready to serve.
  2. Serve salsa with tortilla chips if desired.
