½ large cantaloupe
¾ c. finely diced red bell pepper
¼ c. finely chopped cilantro
2 tbsp. finely chopped green onions
1 jalapeno pepper, finely minced
2 tbsp. lime juice (juice of 1 lime)
1 tsp. red pepper flakes, optional
1 packet(s) Hy-Vee tortilla chips, optional

Directions

  1. Remove seeds and rind from cantaloupe. Chop into very small diced pieces.
  2. Place chopped cantaloupe into a mixing bowl.
  3. Add diced red bell pepper, cilantro, onion, jalapeno pepper and lime juice. Stir to combine.
  4. Add red pepper flakes (if desired).
  5. Cover and chill.
  6. Serve with tortilla chips or with grilled chicken or steak.
