    1 ¾ c.all-purpose flour
    ¾ c.milled flaxseed*
    ¾ c.sugar
    1 tsp.baking powder
    ½ tsp.baking soda
    ½ tsp.salt
    2eggs
    c.canola oil
    1 c.mashed bananas (2 or 3 ripe bananas)
    ½ c.chopped walnuts
    ¼ c.brown sugar
    ½ tsp.cinnamon

    Directions

    1. Mix together flour, milled flaxseed, sugar, baking powder, baking soda and salt in a bowl.
    2. In a separate bowl, beat together eggs and oil.
    3. Add dry ingredients and mashed bananas alternately to egg/oil mixture, stirring until dry ingredients are moistened.
    4. Pour into a greased 8.5-by-4.5-inch loaf pan.
    5. Combine chopped nuts, brown sugar and cinnamon. Sprinkle over batter in loaf pan. Pat topping down gently into batter.
    6. Bake at 350 degrees for 55 to 60 minutes.
    7. *Either used purchased milled flaxseed or grind whole flaxseed in a coffee grinder to a granular, free-flowing meal.
